easy salad to make for lunch

Hey guys! I’ve been eating this for lunch for the past two weeks and I had to share. I’m usually a soup for lunch person but it’s been to hot for that lately so I switched to salads.

I roast a peeled peach at 400 degrees until it soft and a fork can easily go through it. When it’s done, I place it in a bowl, drizzle balsamic vinegar over it and set aside.

On a bed of arugula, I then add my sliced heirloom tomato. I like to sprinkle salt and pepper over. Then I had the warm peach and a burrata ball. If you have some good olive oil, you can drizzle a bit over the whole thing. This is so simple and so delicious.
